Creamy, savory, and aromatic, this miso mushroom pasta is my go-to weeknight shortcut for a quick, comforting meal. A spoonful of miso (fermented soybean paste) melts into cream to create a silky base, while a mix of mushrooms adds earthy fragrance and meaty texture. Together, they build layers of umami in every bite, bringing the cozy charm of an Italian trattoria with a Japanese twist.

Why This Recipe Works

Mixed mushrooms: Using at least three types of mushrooms adds layers of flavor and brings a variety of textures to the pasta.

Miso supports mushrooms: Miso is like a supporting cast member, adding depth and umami to the dish without stealing the spotlight.

Give them time: Giving the mushrooms time to release their moisture improves their texture, concentrates their aroma, and encourages rich Maillard browning.

Finish pasta in the pan: Undercooking the pasta and finishing it in the sauce allows it to absorb flavor while releasing starch, which binds with the fat and liquid to form a stable emulsion that coats each piece of pasta.

Ingredients

Dry pasta — Any pasta shape will work, but I chose casarecce because its folds hold onto the miso cream sauce beautifully. Just adjust the cooking time to 1 minute less than the package directions.

Heavy cream — This is the main component of the sauce, giving it both body and richness. I used 42% butterfat cream, but a lower-fat option will yield a lighter sauce.

Hikari Organic Miso White — Mild Shinshu-style miso dissolves easily, offering a balanced, savory-sweet flavor. It enhances the earthy mushrooms while its gentle fruity notes provide a pleasing contrast to their deep savoriness.

Olive oil — Helps sear mushrooms evenly and forms the fat phase of the emulsion with cream and pasta starch.

Mushrooms — Using at least three varieties builds flavor and texture. This time I used equal parts meaty shiitake mushrooms, umami-packed maitake mushrooms, and delicately nutty shimeji mushrooms.

Garlic — Infuses the oil with garlicky goodness. Add it early so it infuses the mushrooms, but keep the heat moderate to prevent scorching. You can also substitute a generous sprinkle of garlic powder.

How to Prepare the Mushrooms

Once mixed, give your yuzu miso a taste. If you want more sweetness or a looser texture, stir in a little extra yuja-cheong, one spoonful at a time. 

  1. Clean gently  Use a slightly damp paper towel to wipe away grit. Do not soak. Mushrooms are mostly water, so excess moisture fights browning.
  2. Prepare mushrooms — Trim the mushrooms and aim for similar thickness so pieces cook at the same rate.
    • Shiitake: Trim off the tough part of the stem. Slice caps.
    • Shimeji: Trim the base to remove the growing medium. Separate into individual mushrooms by hand.
    • Maitake: Trim the base. Tear into natural fronds for more browned edges.
    • Oyster: Trim any tough base. Tear lengthwise for a meaty chew.
    • King trumpet (eryngii): Trim the base. Slice on a bias, or hand-shred into strips.
    • Button/cremini: Wipe clean, then slice.
    • Portobello: Wipe clean, scrape out dark gills if you want a paler cream sauce, cut in half, and slice.
  3. Dry and stage  Spread on a tray to air dry briefly. This gets them browning faster in the pan.

How to Make Miso Mushroom Pasta

  1. Start by salting a large pot of water and bringing it to a boil.
  2. In a small bowl, whisk the miso into the cream until smooth and free of lumps.
  3. When the water is boiling, add the pasta and cook it for 1 minute less than the package directions.
  4. Heat a wide pan over medium heat, then add the olive oil, garlic, and mushrooms—season with salt and pepper. TIP: Mushrooms release a lot of water, so take your time and let the liquid evaporate before they begin to brown.
  5. When the pasta is almost cooked, add the miso cream mixture to the mushrooms and bring it to a boil.
  6. Transfer the pasta straight from the pot into the sauce, letting a bit of the starchy cooking water come along. SCIENCE: The starch in the water helps keep the fats emulsified with the liquids to make a creamy sauce.
  7. Finish cooking the pasta in the miso mushroom cream sauce, stirring constantly, until it reaches your preferred doneness. TROUBLESHOOTING: If the sauce becomes too dry, add more pasta water a little at a time. Garnish with parsley and serve immediately.

Variations to Try

One of the joys of this miso mushroom pasta is how easily it adapts to your mood or what’s in the fridge. By swapping or adding a few ingredients, you can create new layers of flavor while keeping the same creamy, umami-rich foundation.

  • Mushroom and Leek — Sauté thinly sliced leeks with the mushrooms until soft and sweet. Their mild onion flavor melts into the sauce, adding a gentle sweetness that balances the savoriness of the sauce.
  • Mushroom Truffle — Finish the pasta with a small drizzle of truffle oil or shave some white or black truffles on top. The earthy, aromatic fungus enhances the mushroom profile, making it feel instantly luxurious.
  • Herb and Mushroom — Stir in fresh herbs like thyme, basil, or tarragon just before serving. They add bright, aromatic top notes that lift the richness of the creamy miso sauce.

Serve it With

Instructions

  • Bring a large pot of water to a rolling boil. Add enough salt to make it salty (about 2 teaspoons for every 5 cups of water). Boil 200 grams dry pasta for 1 minute less than the time indicated on the package.

  • In a small bowl, whisk together 3/4 cup heavy cream and2 tablespoons ORGANIC MISO WHITE until smooth and free of lumps.
  • Heat a frying pan over medium heat and add 2 tablespoons olive oil, 8 grams garlic, and 225 grams assorted mushrooms. Season with a pinch of salt and black pepper, then sauté until the mushrooms are tender and lightly browned around the edges, about 10 minutes.

  • Reduce the heat to keep the mushrooms warm while the pasta finishes cooking.
  • When the pasta is almost done, pour the miso cream mixture into the pan with the mushrooms and bring it to a full boil.

  • Using a slotted spoon or tongs, transfer the pasta directly to the pan, letting some of the starchy cooking water come along with it. This pasta water will help emulsify the sauce into a rich, creamy coating.

  • Continue cooking the pasta in the sauce, stirring constantly, until it reaches your preferred doneness. If the sauce becomes too thick, add a small ladle of pasta water to loosen it.

  • Finish with chopped flat leaf parsley for a fresh pop of color.

This bright yuzu miso recipe captures that aromatic spark and blends it with nutty, umami-rich white miso. The result is a versatile condiment that makes almost anything taste better.

Whether you use it as a glaze for salmon or tofu, a dip for crisp veggies, or a dressing for salads, this yuzu miso sauce is as easy to make as it is flavorful. Two ingredients and a few minutes are all it takes to create big flavor with minimal effort.

Honey Citron Tea (Yuja-cheong) — A yuzu citrus marmalade made with thinly sliced yuzu peel and honey or sugar. It infuses the miso with yuzu’s floral brightness and adds natural sweetness. Look for it in jars at Asian grocery stores or online. 

How to Make Yuzu Miso

Start by adding the white miso paste and honey citron tea to a small bowl. Stir the ingredients together until they’re evenly combined.

Once mixed, give your yuzu miso a taste. If you want more sweetness or a looser texture, stir in a little extra yuja-cheong, one spoonful at a time. 

It’s ready to use right away, but it also keeps well in the fridge. I like to store it in a small glass jar for easy spooning. Over time, the flavors continue to meld.

Ways to Use Yuzu Miso

Once you have a jar of this in the fridge, the possibilities start to stack up. Try spreading it over poached chicken, grilled salmon, or a slab of pan-fried tofu for an instant flavor boost. Whisk it with olive oil and rice vinegar (or yuzu juice) for a citrusy yuzu miso dressing for salads. You can also use it straight as a dip for crunchy veggie sticks like cucumber, celery, and bell pepper. It’s also fantastic tossed with steamed broccoli or cauliflower. One of my favorite tricks? Glaze par-boiled root vegetables like carrots, parsnips, and potatoes in yuzu miso and oil, then roast at 350°F (175°C) until golden.

Instructions

  • 《Preparation》Trim the ends of the green beans and boil until tender. Place the potatoes in a large pot and cover with cold water by 1 inch. Bring to a boil over high heat, then reduce the heat and simmer for 10 minutes, or until fork-tender. Drain and set aside to cool to room temperature.

In this miso ice cream recipe, miso adds a savory backbone that transforms a familiar scoop into something layered and unexpected: creamy vanilla, a touch of salt, and ribbons of caramel infused with a mellow, nutty miso flavor. Think of it as salted caramel ice cream with a grown-up twist—deeper, toastier, and more complex. As it freezes, the miso caramel turns deliciously chewy, creating waves of contrasting textures in every bite. Best of all, this no-churn recipe comes together in minutes with just a handful of pantry staples—no ice cream maker required. Here’s why it works so beautifully.

Why This Recipe Works

  • White miso adds depth — Its subtle sweetness and fermented complexity deepen the caramel’s flavor, balancing the sweetness of the vanilla ice cream base. 
  • Whip instead of churn — By partially whipping the cream, you aerate it, mimicking the decadent texture of churned ice cream without a machine. 
  • Double creamy — By sweetening the cream with sweetened condensed milk you get a double dose of rich milky flavor.

Ingredients

Heavy cream — The primary component of the ice cream base. It provides richness and aeration when partially whipped. Using a cream with a high butterfat content (over 40%) helps reduce the formation of ice crystals, resulting in a silky smooth texture.

Organic White Miso — Adds fruity, nutty umami that balances the sweet caramel and mimics a salted butterscotch note. Other types of miso, such as Saikyo Sweet Miso or Organic Red Miso, will also work well. 

Sugar — Granulated sugar works fine, but if you want a more flavorful caramel, use evaporated cane sugar. 

Water — Adding water to the sugar when caramelizing, helps it melt evenly and prevents crystallization.

Sweetened condensed milk — Boosts milky sweetness and creates a creamy mouthfeel without needing egg yolks or a custard base.

Vanilla extract — Adds warm floral notes that complement both the miso ice cream.

How to Make Miso Ice Cream

Start by dissolving the white miso paste with the cream for the caramel. This helps it dissolve smoothly into the hot caramelized sugar without clumping.

To make the miso caramel, add the sugar to the center of a pot and surround it with the water. Gently steam it covered with a lid until the sugar has fully dissolved. Remove the lid and boil the liquid sugar over medium heat until it reaches 350°F or turns medium brown in color. Immediately stir in the miso cream. It will bubble up fiercely, so stand back and stir until smooth.

Let the caramel cool completely before you move on. This keeps the whipped cream from melting when the caramel is swirled in. Meanwhile, combine the remaining cream, sweetened condensed milk, and vanilla in a medium bowl, then whip it until soft waves form.

Pour the miso ice cream base into a container, then swirl in half of that luscious miso caramel. Use a chopstick or a thin stick to swirl the ribbons of caramel into the ice cream base, then freeze it overnight. When you’re ready to serve, let it soften briefly at room temperature. Warm the leftover caramel and drizzle it over each scoop for a glossy finish.

Instructions

  • Add 1/4 cup heavy cream and 1 tablespoon Organic Miso White to a small bowl and mix together until there are no lumps of miso remaining.

  • Add 1/4 cup sugar to the center of a small pot and drizzle 2 tablespoons water around the edges of the pot. Cover with a lid and turn the heat on to medium. Bring the mixture to a boil and let the sugar steam until it is fully dissolved.

  • Remove the lid and allow the sugar mixture to boil until it reaches 350°F (177°C) on an instant-read thermometer. If you’re not using a thermometer, look for a medium brown color.

  • Quickly turn off the heat and pour in the miso and cream mixture, stirring it into the caramel until well combined. It will vigorously bubble and steam, so be very careful. Transfer the caramel to a heat-safe bowl and let it cool to room temperature.

  • When the caramel has fully cooled, make the ice cream base by adding1 cup heavy cream, 1/4 cup sweetened condensed milk, and 1 teaspoon vanilla extractto a mixing bowl. Use a spatula to combine the ingredients.

  • Using a whisk or electric beater, whip the cream until it forms soft waves and has thickened to the consistency of thick pancake batter.

  • Pour the whipped cream into a freezer-safe container. Then, drizzle about half of the miso caramel into the ice cream base. Use a chopstick to swirl in the caramel.

  • Cover the container and freeze overnight.
  • To serve, remove the miso ice cream from the freezer about 5 minutes before serving to soften it slightly before scooping. Heat the remaining caramel sauce in a microwave oven for a few seconds and drizzle on top of the miso ice cream.

  • 2 tbsp Sesame oil

  • 15 g(0.5oz) Ginger, grated
  • 2 cloves Garlic, grated
  • 1 tbsp Tahini
  • 1 tbsp Rice vinegar

Instructions

  • In a bowl, mix together all the ingredients for sauce <A>.
    Preheat your oven to 200°C (390°F).
  • Slice the white part of the green onions into 5cm long thin matchsticks. Thinly slice the green part and soak it in ice water to crisp up. Set aside.
  • Arrange the sausages and cabbage in a sheet pan, and brush generously with about half of the sauce <A>. Leave the rest of the sauce <A> for later. Bake in the preheated oven for 20 minutes.
  • In a bowl, combine the sliced white part of the green onions with the remaining sauce <A>. Add the canned beans along with their liquid(200ml) and mix gently.
  • Remove the sheet pan from the oven. Transfer the sausages and cabbage to a separate plate temporarily. Pour the bean mixture into the sheet pan, then place the sausages and cabbage back on top.
  • Return to the oven and bake for another 20–25 minutes, or until the sausages are nicely browned and the liquid has reduced.
  • Garnish with green onions and serve hot.
