Remove the stems from the tomatoes and cut them in half horizontally. Place them skin-side down in a pot. Heat them gently, peeling off the loosened skin as it softens, and roughly mash the tomatoes with a spatula.
Simmer over low heat, stirring occasionally to prevent burning, until the liquid reduces by half (about 10 minutes).
Add water and ORGANIC MISO "MILD SODIUM MISO", then bring to a boil. Turn off the heat and serve. Top with a drizzle of olive oil and a sprinkle of grated cheese for the perfect finishing touch.
