Cook potato and zucchini in a medum-sized skillet over medium heat until golden. Set aside.
In a bowl, whisk eggs, milk, miso, and cheese.
Add olive oil to the pan, pour in the egg mixture, and layer the cooked vegetables on top.
Cook over low heat until the mixture is set (for 7 minutes).
Turn it over, cover with a lid and cook for another 5 minutes.
