  • 1 Medium potato, thinly sliced
  • 1 Zucchini, thinly sliced
  • 50 g(1.8oz) Shredded cheddar cheese
  • 1 tbsp SAVOURY WHITE MISO
  • 2 tbsp Milk
  • 1 tsp Olive oil

Instructions

  • Cook potato and zucchini in a medum-sized skillet over medium heat until golden. Set aside.
  • In a bowl, whisk eggs, milk, miso, and cheese.
  • Add olive oil to the pan, pour in the egg mixture, and layer the cooked vegetables on top.
  • Cook over low heat until the mixture is set (for 7 minutes).
  • Turn it over, cover with a lid and cook for another 5 minutes.
