Miso is very compatible with meat. This Miso Marinated Meat recipe will tenderize the meat and pull out the savoru “umami” flavors within it for a mouth-watering and satisfying meal. Use this marinade in all types of beef, pork and chicken.

Ingredients

  • 1 lb. 450g beef/ pork

Miso Marinade

  • tbsp ORGANIC MISO RED adjust to taste
  • ½ tbsp soy sauce
  • 6 tbsp sugar
  • ¾ cup 180 ml sake or white wine (for our purposes 1 cup is equal to 240 ml)

Instructions

  • Mix all ingredients together to make the marinade.
  • Seal the meat in a container with the marinade for at least 1 hour.
  • Cook marinated meat in your desired fashion.

  • ¼ lb 110g pork belly cut into 2-inch slices
  • 1 potato cut into 1-inch pieces
  • ½ 60g sweet potato cut into 1-inch pieces
  • 60g kabocha squash cut into 1-inch pieces
  • ¼ onion cut into 1-inch pieces
  • 2 tbsp. white miso
  • 16 fl oz. 450ml water
  • 1 tsp. butter

Instructions

  • Heat butter in a pot over medium heat and add pork belly slices, potato, sweet potato, kabocha squash and onions. Cook for 2 minutes.
  • Reduce heat. Add half of the water (8 fl oz.) and simmer for 10 minutes.
  • Add remaining water and dissolve miso. Bring it to simmer. Serve

Ingredients

  • 3 lbs. beef chuck roast (or pork tenderloin for a lean finish)
  • 1 piece gingerroot mashed
  • 1 piece lemon grass mashed (or 1 tbsp. lime juice)
  • 2 garlic cloves (mashed)
  • 2 roma tomatoes
  • ¾ cup ORGANIC MISO SAIKYO SWEET
  • 1 tbsp. sugar
  • 2 oz. honey
  • 2 cups water (for our purposes 1 cup is equal to 240 ml.)
  • Your choice Vegetables of your choice for garnish

Instructions

  • Roast garlic and tomatoes in oven at 375 degrees until dark brown.
  • Place roasted garlic and tomatoes into a large pot; add miso, sugar, honey, ginger and garlic. Mix thoroughly.
  • Place meat into the pot and seal tight with lid and/or aluminum foil; roast in 300 degree oven for 2-1/2 to 3 hours until meat is tender and well done.
  • Remove roast from pan and allow to rest for 5 minutes. Slice and serve hot. Use the reduction juices in the pot as gravy for the pot roast.
