Heat the oil in a large pan over medium heat.Add the minced ginger and cook until fragrant. Add the meat and sauté until just cooked through. Stir in the miso and cook briefly, allowing it to coat the meat evenly.
Bring a pot of water to a boil. Add the noodles and halved bok choy, cooking until the noodles are tender. Drain thoroughly.
In a serving bowl, combine all ingredients of [A] until smooth and well blended. Add the drained noodles and toss until evenly coated.
Top with the miso-seasoned meat, chopped green onions, crushed peanuts, and the cooked bok choy. Serve immediately, adjusting the heat with chili oil or spices if desired.
