Japanese cuisine is naturally well-suited to vegan diets, with its focus on vegetables and plant-based proteins. But what about miso: is miso vegan? In most cases, yes— traditionally produced Japanese miso paste is typically plant-based. Still, there are a few exceptions, and spotting them starts with understanding what miso is.
Traditional miso is made by fermenting soybeans with salt and a grain (like rice or barley), using a starter culture called koji. The result is a thick, savory paste with a rich, earthy flavor—nutty, salty, and packed with plant-based umami.
