Hikari Miso Co., Ltd. announces the launch of “DASHI KAORU MISO” blended miso containing the finest dashi stock, made from single-origin ingredients. “DASHI KAORU MISO” means miso with a pleasant, savory aroma of dashi. This product will be available from March 1, 2026, at supermarkets and other retail outlets throughout Japan.

■ “DASHI KAORU MISO” FEATURES
“DASHI KAORU MISO” is made from a blend of rich, full-bodied red miso, and white miso, which is characterized by a clean, fresh palate. For the dashi component, great care has been taken to source ingredients from specific locations renowned for their quality products: fragrant katsuobushi (bonito flakes) from Yaizu in Shizuoka, and kombu seaweed with a refined umami from the Hokkaido island of Rishiri. To draw out the full aroma of the katsuobushi, the katsuo dashi is carefully extracted immediately before mixing with the miso. This extra attention to the process gives a paste of superb depth, with a distinctive hint of katsuo dashi. A smooth koshi (ground) miso, “DASHI KAORU MISO” dissolves easily, making it not only ideal for soup, but an excellent go-to ingredient for the home cook, including in stewed and sauteed dishes.
