HIKARI MISO Co., Ltd. is excited to launch four gelato varieties as part of its new buquérico range of products offering innovative ways to enjoy the benefits of fermented foods. buquérico gelato, more than just sweet, is the grown-up treat and playful new product of fermentation art. It is available from December 15 exclusively on the official buquérico online store.
Made with fermented ingredients, rather than relying solely on sugar, buquérico gelato utilizes the innate sweetness of fruit and amazake sweetness made of cultured rice koji offering a treat for the discerning palate distinguished by melt-in-the-mouth natural sweetness. Each lingering recollection of time spent with a special someone has its own special sweetness, and the same can be said of buquérico gelato with its different strains of sophisticated, subtle indulgence. Each flavor bears a name that echoes these precious memories.
buquérico– an innovative way to enjoy the benefits of fermented foods
Since its foundation in 1936, Hikari Miso has been earnestly engaged in miso making that is so natural, nutritious, authentic, and traditional in Japanese history of more than ten centuries. The buquérico range, launched in autumn 2022 and based on a philosophy of “enjoy fermentation!” offers a new approach to accessing the benefits of fermented foods, via a selection of sophisticated, low sweetness treats that slot seamlessly into settings where miso is not traditionally consumed, such as at afternoon tea, or to complement an evening tipple. The first products to be released were bean to MISO, serving up the natural flavor and color of beans, and the miso-infused dip & spread snack food. Latest in the range are gelato flavors that have some innovative fun with the ancient fermentation art and offer more than simply sweetness.
DEAI (Encounter) Milk and Miso
The gelato, with a subtle hint of miso saltiness, is made using rich and fresh milk sourced exclusively from a stress-free breeding ranch on Karuizawa heights in Nagano. The secret ingredient here is white koji miso, distinguished by its fresh and fruity fragrance. Finding the occasional grain of koji among the pure whiteness of this gelato might bring good fortune.
HORONIGA (Bittersweet) Miso Caramel
A bittersweet iced treat for the sophisticated palate. Miso is slowly simmered to produce a savory caramel flavor. The caramel is then heated at a high temperature to draw out its bitterness, then fresh cream added for a luxurious finish. The salt of miso accentuates the sweetness of the caramel in a gelato that promises a more complex, grown-up counterpoint to the milky encounter.
HATSUKOI (First Love) Frozen Apricot Yogurt
A yogurt gelato with the sweet-sharp sting of first romance. HATSUKOI marries rich yet refreshing Greek-style yogurt using fresh milk from Hokkaido with a slow-simmered jam of luscious apricots from Nagano to recreate the flavor of youth – a treat to share on a park bench with a special someone.
KATAOMOI (Unrequited Love) Amazake and Banana
Craft amazake made from cultured rice Koji combines with a generous proportion of ripe bananas to create an iced confection of alluring intensity. The amazake brings out the natural umami and sweetness of the banana and milk. Adding the amazake, at the last minutes just before completing the ice cream making process, highlights the subtly grainy texture of koji to brilliant effect. The amazake used contains no alcohol, making this a gelato also suitable for children.
