HIKARI MISO LAUNCHES “CRAFT MISO NAMA-KOJI Premium”  LIMITED SEASONAL ADDITION TO POPULAR “CRAFT MISO” RANGE

HIKARI MISO Co., Ltd. announces the launch of “CRAFT MISO NAMA-KOJI Premium,” a new seasonal limited-edition miso in its “CRAFT MISO” range. The new product for release exclusively in Japan, will go on sale in supermarkets and other food stores across the country from June 1, 2024.

“CRAFT MISO NAMA-KOJI” is made using HIKARI MISO’s unique new “Cozy & Koji” blending process to impart fresh, fruity flavor and juicy texture. Part of the “CRAFT MISO” series of new-generation miso varieties lower in salt and suitable for enjoying straight from the tub, “CRAFT MISO NAMA-KOJI” has proven a hit with well over 1 million units sold since its release in September 2022. This latest product, “CRAFT MISO NAMA-KOJI Premium” is a top-of-the-range miso made from the finest ingredients, that can only be produced once a year.

“CRAFT MISO NAMA-KOJI Premium” is a seasonal limited-edition miso, crafted in the depths of winter ― the best time of year for miso fermentation ― from generous quantities of new rice and soybeans. Made from Hokkaido “Yukihomare” soybeans, distinguished by their high sugar content, for optimal sweetness and flavor depth, and “Koshihikari” rice from Aichi, “CRAFT MISO NAMA-KOJI Premium” offers the fresh, fruity flavor and juicy texture miso lovers have come to expect from “CRAFT MISO” products.

“CRAFT MISO” FEATURES

1. New original “Cozy and Koji” blending process

The new “Cozy & Koji” blending process which takes twice as long as ordinary miso production, has allowed HIKARI MISO to deliver a different taste and texture to previous miso products.  A team of veteran miso-makers worked tirelessly to develop the best combination of koji culturing, temperature control, and blending technique, all undertaken by hand and without pasteurization.

2. Full and fruity flavor

The fresh, fruity flavor and juicy texture are achieved by using a generous proportion of koji to maximize sweetness. Salt content has also been reduced by 25 percent compared to other HIKARI MISO regular miso varieties, making “CRAFT MISO” products an even more tempting treat straight from the tub. It is crafted exclusively from rice grown in Japan.
