  • 1 lb (450 g) Shrimp (raw, in shell)
  • 1 tbsp Salt
  • 1/4 Lemon, cut into wedges
  • To taste Italian parsley, fresh

  • 3 tbsp Ketchup
  • 2 tbsp AGED RED MISO
  • 1 tbsp White vinegar
  • To taste Hot sauce

Instructions

  • Remove the heads from the shrimp, leaving the tails intact. Peel off the shells, then make a shallow cut along the back and remove the vein.
  • Bring a pot of water to a boil with salt. Add the shrimp and cook for about 2 minutes, until they turn pink.
  • Drain the shrimp and chill in the refrigerator until cold.
  • In a bowl, combine all ingredients in [A], adjusting the amount of hot sauce to your preferred level of heat.
  • Arrange the shrimp on a serving plate with the sauce. Garnish with lemon wedges and fresh Italian parsley.
