Miso Marinated Black Cod recipe by Chef Nobu Matsuhisa

Nobu-style Miso Marinade

  • 3 tablespoons sake
  • 3 tablespoons mirin
  • 1/2 cup white miso
  • 1/3 cup sugar
  • 6 7-ounce skinless black cod fillets (about 1 1/2 inches thick)


  1. Boil sake and mirin over high heat and reduce by 1⁄3.

  2. Turn heat down, add miso and sugar, and cook for 2 to 3 minutes, stirring constantly to prevent burning.

  3. Cool to room temperature.

  4. Marinate cod fillets in the miso mixture for 4 days.

  5. Gently wipe off excess marinade from the fillets and grill or broil until well browned.

*For our purposes 1 cup is equal to 240 ml

    Are your miso products gluten free? I have just recently bought Shinshu Shiro Miso and I’m wondering if there is any gluten in the ingredients? Please let me know.

    This is one of the best recipes and fish dishes I’ve ever had. I have recommended to many others and served to many others who have been equally happy with this fish recipe. I suggest substituting white wine for the mirin as it is packed with sugar… I strongly honey or pure maple syrup to sweeten, much healthier sweeteners

  3. Sugar is sugar, friend. None of it’s “healthier” if you’re using it to achieve a specific level of sweetness.
