The Koji no Hana Mutenka Organic Miso series from Hikari Miso Co., Ltd. received the Social Products Award of the Social Products Award 2020 sponsored by the Association for the Promotion of Social Products (APSP).
About the Social Products Award
The Social Products Award, hosted by APSP in Tokyo, sheds light on products that contribute to a sustainable future and is Japan’s first award program to recognize not only product design and functional marketability, but also a product or service’s consideration for the environment and society. Beginning in 2012, this year marks the award’s seventh year.
The winning products have been on exhibition and sold at a special event space at the Daimaru Department Store in Tokyo. The event took place from Wednesday, March 11, 2020 through Monday, March 17, 2020
About the Koji no Hana Mutenka Organic Miso Series, Winner of the Social Products Award
This year’s recipient of the Social Products Award, the Koji no Hana Mutenka Organic Miso series, is organic miso made with organic rice and organic soybeans delicately cultivated by skilled and dedicated farmers. The miso is brewed at the base of the Japanese Alps in a cool climate and with access to a rich water source, the perfect conditions for fermenting miso. In addition to the original miso, the Koji no Hana Mutenka Organic Miso series also includes reduced sodium miso, mugi (barley) miso, and genmai (brown rice) miso.
These products feature shiny white grain miso and include 20% more koji, or rice culture, than soybeans, which brings out the flavor. If the ratio of koji is too high, it becomes too sweet, tough to eat, would not bring out the best flavor in dishes, and it would be difficult to use in cooking. Striking the right balance between the ratio of koji and the fermentation time is necessary to bring about an ease of daily usability and the right flavor. The boldness of the koji should stand out from the mellow taste of the miso. The Reduced Sodium has 25% less sodium than the original miso.
The Mugi Miso is made with organic barley, organic soybeans, and natural sun-dried salt. Mugi-based koji produces an outstanding full-bodied aroma. Even those unaccustomed to the strong sweetness of mugi miso can still enjoy the flavor of 50% more koji than soybeans. The Genmai Miso is made with organic brown rice, organic soybeans, and natural salt. The miso is highlighted by its deep flavor and aroma matured by the brown rice koji’s long fermentation period. The grainy texture of the brown rice is also enjoyable.
