Japanese Kaiseki Restaurant GINZA 豉 KUKI Now Serving Vegetarian Lunch

GINZA 豉 KUKI, a Japanese kaiseki restaurant established by Hikari Miso Co., Ltd., is now serving lunch to include a selection for vegetarian guests. The newly added meal, only using plant-based ingredients such as roasted soybeans instead of bonito for the miso soup dashi, still honors the Japanese culinary tradition of fermentation and aging without compromising the richness of flavor.

Minced Cutlet Curry Using Company’s Vegetable Protein Product

The new lunch item “Vegetarian Minced Cutlet Curry Meal” is made entirely with plant-based ingredients. The curry is cooked with chopped onions, carrots, shiitake mushrooms, a blend of spices and a ground meat substitution HÄRKIS®FINLAND Yasai no Soboro. It is Hikari Miso’s vegetable protein product made from fava beans grown in Finland. The curry is topped with a thick vegetarian minced cutlet, also prepared using this product, and a colorful array of lightly fried summer vegetables.

GINZA 豉 KUKI created a homemade sauce blending miso, six ingredients and an 11-spice seasoning exclusively for the vegetarian lunch. Guests can enjoy an enhanced flavor by pouring the sauce over the minced cutlet and keema-style curry.

The miso soup is made with naturally fermented and long-aged miso using domestic Japanese soybeans and rice. The dashi is prepared with roasted soybeans instead of bonito and is combined with kombu kelp dashi for a complex, savory finish, tailored with a distinctive aroma to stir the appetite. To finish the meal on a sweet note, special ice cream has been prepared with amazake (a sweet fermented rice drink) and sakekasu (leftover bits from the sake making process) known as sake lees to bring out soft fermented accents within the deep richness of the dessert.
