A brand new noodle soup lineup from Hikari Miso Co., Ltd. will be on sale at supermarkets and grocery stores in Japan starting September 1, 2020. The Rice Noodle Soup series, featuring Japanese dashi stock, will include three flavor selections: Yuzu Flavored Bonito Dashi, Mekabu and Ago Dashi (root wakame seaweed and flying fish), and Chicken and Vegetable Dashi.

Flavor Unique in Japanese Stock
The term “dashi” is a soup stock often made from seafood and vegetables. It is an essential part of Japanese cuisine that adds umami, a deep and savory flavor, to every dish. The Rice Noodle Soup series highlights the umami of dashi and offers three delicious options. The Yuzu Flavored Bonito Dashi uses bonito flakes and shiitake mushrooms for a rich soup with a hint of yuzu citrus. A combination of ago dashi, mekabu and wakame seaweed brings out the scent of the sea for the Mekabu and Ago Dashi. Finally, the Chicken and Vegetable Dashi boosts the sweetness of cabbage and the aromas of savory chicken and burdock root for its mild vegetable dashi. Each package contains five servings.
Company to Challenge in Growing Market of Dashi
As interest in Japanese cuisine continues to rise all over the world, the domestic market for dashi, the ever-important element of Japanese cooking, is also expanding. The flavor of dashi can still make a delicious meal without the addition of large amounts of seasoning, and there has been an increase in demand from health-conscious people, as well as those on special diets that limit sodium and sugar. The segment of packed dashi products, which often contains powdered bonito and kombu seafood, has grown with the benefits to enjoy a quick, yet traditional stock. A research firm predicts that the market scale will be at 15.2 billion yen by 2024, a 125% increase from 2018 (1).
Based on these findings, Hikari Miso has turned its attention to dashi. The dashi and the noodles are also gluten free, allowing for those limiting their gluten intake to unreservedly enjoy this new lineup.
