GINZA 豉 KUKI, a Japanese restaurant owned by Hikari Miso Co., Ltd., offers seasonal dishes with the excellence of miso and other ingredients of Japanese traditional fermentation technique. The restaurant is announcing the details of its February menu. It includes fine dishes to celebrate early spring season, deep-fried butterbur sprouts, gourmet tilefish or Japanese name Amadai with butterbur miso sauce, Osuimono clear soup with baked blowfish milt.

    Miso soup with smoky flavor of scorched green onion

    Sashimi of the day and garnish
    House specialty of Tamari sauce
    Irizake – plum & bonito seasoned sake sauce, and yuzu miso sauce
  • Osuimono Clear Soup
    Blowfish soup with baked soft roe, turnip, green onion, with a tint of ginger flavor
  • Chilled
    Chawanmushi (steamed egg custard), Kuki signature dish featuring marriage of sweet white miso and fromage, topped with Japanese Asari clam potage and leaf buds
  • Fried Dish
    Amadai tilefish, sided with deep-fried butterbur sprouts and butterbur miso sauce

    Hojicha – Roasted tea granité

    Wagyu sirloin from Masuda ranch in Gunma prefecture, marinated with miso and sake lees, then tenderly grilled.
    Sided with onions seasoned with house blend of special soy sauce and rice vinegar.

    Akagai ark shell and Kikurage mushroom seasoned and aged in house special ponzu sauce, and grated yam – Tororo

KUKI sommelier recommends pairing the course with a selection of rare Swiss wines. Limited quantity available. Only 0.4 percent of wine worldwide is produced in Switzerland, and only 2 percent of that is exported outside of the home country.

To describe Swiss wine in just a few words – delicate, elegant, refreshing and clear as the brisk mountain air of the Alps. This delicateness allows it to pair beautifully with Japanese cuisine with its subtle flavors not overpowering foods.
